• 3 red beets, dicedÂ
• 2 carrots, choppedÂ
• 1 sweet potato, choppedÂ
• 2 zucchini, choppedÂ
• 1 small onion, choppedÂ
• 1/4 cup olive oilÂ
• 1 cup sliced mushroomsÂ
• 1/4 cup fresh sage, choppedÂ
• 1 cup smoked sausage, slicedÂ
• 2 oz goat cheeseÂ
• Salt and pepper, to tasteÂ
• Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and onion. Cook, stirring occasionally until onion is soft, about 5 minutes. Stir in remaining vegetables, and season with salt and pepper or Nick’s 26 seasonings.Â
• Add remaining olive oil and continue cooking for 10-15 minutes or until veggies are soft and caramelized. Stir in sausage, and sage and cook another minute or two. Remove from heat and top with goat cheese and serve.
